Oreo Chocolate Chunk Cupcakes

Last week was appa amma's anniversary. After an elaborate bake for the kid's monthly birthday, she didn't want another cake. Also appa was away and so that was another reason. She wanted it to be simple and so she asked for some cupcakes. The initial plan was to make some low-fat breakfast carrot cupcakes but then "any occasion bakes" calls for sugar, butter and chocolate and so I settled for these vanilla cupcakes studded with oreo pieces and chocolate chunks.

There is gonna be a cake, that is for sure but we have postponed it till appa comes back so that he gets a bite too. Coming to these cupcakes, they were soft, moist and totally yummy. The sweetness was just right with all that dark chocolaty goodness and the oreo pieces gave a good crunch and a rich kick and amma loved it.

On second thought, strike that line above, there were no initial plans infact, as we had just finished the last piece of the checkerboard cake the day before and so you know... And when amma came to know that I was not upto anything, she started muttering around... "Its your appa amma's anniversary you know, can't you even make a simple semiya payasam". Now these words triggered the baking guru in me and I asked her what she wanted. She made it simple by saying cupcakes. She loves chocolate and so rather than the usual chocolate cupcakes, I made these cute vanilla cupcakes, added some chopped dark chocolate chunks, some pieces of chopped oreo cookies and it made a big difference. Amma loved it and thats what it was about.

~*What U Need*~
All purpose flour - 1 cup
Egg - 1, room temperature
Butter - 2 tbsp
Vegetable oil - 2 tbsp
Milk - 1/4 cup
Cream - 1/4 cup
Sugar - 4 tbsp
Sweetened Condensed milk - 1 tbsp
Baking powder - 1 tsp, scant
Salt - a pinch
Vanilla extract - 1/2 tsp
Chocolate chunks - 1/4 cup
Oreo cookies - 6

How I Made it:
Preheat oven to 180C. Sift flour, baking powder and salt (I used salted butter and hence skipped it). Whisk condensed milk, milk and cream till combined. In a bowl, whisk butter, oil and sugar till pale and well combined. Add egg and beat till pale and fluffy.

Add milk and vanilla extract and combine well. Add the dry mixture and whisk gently.

Add the chocolate chunks, broken oreo pieces and fold. Reserve few to top the cupcakes. Line a muffin pan with liners and spoon in the mixture. Top with the oreo pieces. Bake for 12-14 mins or until a tooth pick inserted in the middle of the muffin, comes out clean. Allow to cool.

Enjoy.. Kids will love it and so will elders.

White Chocolate Oreo Cookie Mousse Pie | Easy Dessert Ideas

Ask Mr.A which is his favorite of my cooking, he won't give a second thought in saying "the melt-in-the-mouth chocolate mousse pie". He loves it to the core and whenever I ask him "Do you want me to make anything special for you?", he just asks me to make THE pie. Yes, he calls it "the" pie to give it that extra credit.

Now that I have made the same pie countless times, I have started experimenting by incorporating new elements and different flavors in the mousse. And that is how I came up with this decadent dessert. I would say it was too sweet and not-my-kind... but it was fit for the huss who is an absolute sweet- tooth mouth. This was made sometime back and was re-visited again to be improved as Peanut Butter Mousse Oreo-Crust Pie which I made for our anniversary. He was delighted with the flavor variation and with him being a PB fan, it has become his favorite now.

Make this easy peesy pie when you are running out of time and when you have friends over. You can make this the day before also and chill it overnight.

~*What U Need*~
For White Chocolate Oreo Cookie Mousse
White chocolate, melted - 1/4 cup
Powdered Sugar - 2 tbsp
Fresh cream - 3/4 + 1/2 cup
Oreo cookies - 5 to 6, chopped

For Cookie Base
Digestive biscuits - 1 packet
Butter - 2 - 3 tbsp

Chocolate vermicelli - to garnish

How I Made it:
Cookie Base:

Blitz the digestive biscuits along with the butter and sugar. Adding the sugar is purely optional. You can do this if you are a complete sweet-tooth. Else skip it. I skipped adding sugar. Press this dough into a tart pan firmly. Bake it for 10 mins or till it turns golden brown.

White Chocolate Oreo Mousse:
Chill the mixer blades and bowl at least for half an hour. Whip 3/4 cup of the cream adding the sugar slowly and increasing the speed gradually till it stands in peaks.
Melt white cooking chocolate using double boiler or in the microwave oven at high for 1 minute checking every 10 seconds. While still warm, add the 1/2 cup cream, and combine well. Add the whipped cream and fold in gently. Add the chopped oreo cookies and fold.
Dump the mousse onto the cookie base and level it. Refrigerate for 2-4 hours.

Slice and Serve!!! When serving, sprinkle chocolate vermicelli on top or crumbled oreo cookies.
