Honey Lime Sweet Potato Tacos

I love tacos because it is easy to assemble and makes for a delicious dinner. Well its only me when it comes to world cuisine, the huss has never been a big fan. The thing he never enjoys when I try new dishes at home but for that reason he never detests what that is served for him. He eats the dinner whole heartedly, but he would always prefer a plate of biryani. I love trying new taco recipes and I came across this honey lime sweet potato tacos from Cooking Classy when I was browsing Pinterest and it immediately caught my attention. The flavor pairing was so good and even pappu loved the filling. He loved picking the beans, the corn and the sweet potatoes and calling out names everytime he popped one into his mouth.

Sweet Potato Spinach Stir Fry

I generally include spinach, broccoli and kale atleast once in a week. While the huss complains about it everyday, I never care about it and I know that secretly he is happy about the healthy diet plan that I serve him. Mostly I make dhal out of the lot, but at times I like to experiment indianising it whenever I can like the kale sambar that I made sometime back. I have also tried kale chips and oven roasted broccoli which we usually snack on with tea.

I am was a die hard potato fan but then I had to give up eating it due to a few personal reasons. Come sweet potato to the aid. Though it tasted nowhere near potatoes something is better than nothing. This dish is inspired from the famous Aloo Methi and now its become a staple at home. This is the only way that I can feed sweet potato to my boys these days. Oh there is the occasional deep fried sweet potato fries and the often prepared baked version but this stir fry is becoming a weekly occurence at home. Toast them till nice and crispy and it makes a perfect side for a simple rasam saadam.

Sweet Potato Podimas/Masala ~ a Dosa stuffing too...

Sweet potatoes are my favorite. Nothing to be done special, just boil it peel the skin and a healthy sweet is ready for me... I have it for breakfast, snack and dinner... give it to me anytime and I would happily eat it.
This time when I bought a batch of sweet potatoes, I wanted to try something new and hence used half of the batch to make oven baked fries and the remaining was waiting in the fridge to be used.

I hadn't decided on a recipe to put the next batch to use and was thinking of boiling it as usual when I saw this recipe in a TV cookery show and was instantly hooked to it. It is simple yet has got great flavors in it from the crunchy onions and ginger.

~*What U Need*~
Sweet Potato - 2
Onion(medium) - 1
Ginger(finely chopped) - 1/2 tbsp
Green chilli(finely chopped) - 1
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Urad dhal - 1 tsp
Curry leaves - 1 sprig
Oil - 2 tsp
Salt

For Dosa
Dosa batter - as needed
Oil

How I made it:
Pressure cook the sweet potatoes for 1-2 whistles. Peel the skin and mash well.
Heat oil in a kadai, add mustard seeds and allow to splutter, then add in cumin seeds, curry leaves and urad dhal. When urad dhal has browned, add chopped ginger and green chilli and fry for 1 min. Next add the onions and saute for 2-3 mins. Do not fry till transparent, we need it to be crunchy.

Add salt and the mashed potatoes and mix well. If you feel the mixture is too dry, add some water and bring it to the desired consistency.

Serve as side dish or you can use this as a stuffing to make Sweet potato masala dosas as I did.

Sweet Potato Masal Dosa:
Heat your dosa tawa, spoon out a ladle of dosa batter and toast till brown. Pour oil on sides. Flip over and toast the other side. When done, flip, spread the sweet potato masala filling as desired, close the dosa and serve.

Serve with chutney and sambhar.

Oven Baked Sweet Potato Fries

When I was a kid, amma used to make us french fries for our after-school snack. Those were days when we indulged in all kind of oily and fatty foods without a second thought. But these days whenever I think of frying something, my first concern would be the family's health. Can I afford frying something for the in-laws without any concern of their age and so, I just try to restrain me from deep frying anything whenever I can.

An occasional fry tempts me and the huss but when I find an alternate option to that and suggest it, he usually opts for the healthier version. So when I made these baked sweet potato fries for our weekend tea-time, I was glad to see him happily munching on these.

~*What U Need*~
Sweet potatoes - 2(medium)
Olive Oil - 1 tsp
Salt - to taste
Pepper powder - 1/4 tsp
Chilli Powder - 1/2 tsp
Italian seasoning - 1/2 tsp

How I Made it:
Peel and cut the sweet potatoes as desired. The thinner, the crunchier. Preheat oven to 220 C. Line a baking sheet with aluminum foil, keep aside. Mix all ingredients till the potatoes are evenly coated. Arrange the fries in a single layer on the baking pan.
Bake for about 10 minutes. Remove, turn the pieces over and bake for another 10 mins.

Serve with ur favorite dip!!!
