Mango Kulfi | Easy Sweet Recipes

I love kulfis. To describe them simple, kulfis are frozen rabris which is nothing but reduced sweetened milk. Kulfis remind me of my maternity days because I had a very big craving for these beauties when I was pregnant and the small kulfi stall in our office canteen was always my savior. They sold the best kulfis and I used to have one every week. I made these kulfis last week when those memories hit me. I had some canned mango pulp on hand and it found its way into the milk mixture to make these amazing mango kulfis.


~*What U need*~
Evaporated milk - 1 can
Whole milk - 1/2 cup
Sugar - 1/4 cup + 2 tbsp
Mango pulp - 1/2 cup, I used sweetened so skipped the 2 tbsp sugar
Almonds, Cashews - 1/4 cup
Cardamom powder - 1/4 tsp

How I Made it:
In a wide pan, add the evaporated milk and whole milk and bring it to a boil. Reduce the flame and simmer for 6-7 mins. Add sugar and boil for 2-3 mins. Reduce the flame to low and add the mango pulp. Stir till dissolved. Add ground almonds and cashews and mix slowly for 5-6 mins. Add cardamom and remove from flame. Cool and pour into moulds. Refrigerate overnight till set.


Serve cool!!!

Indian Kulfi (with Cardamom & Nuts)

Life gets better when you have a kulfi. Seriously. One thing that I craved a lot when I was pregnant was Kulfi. And one stall that I visited regularly then was the Matka kulfi stall in the canteen. They sold awesome kulfis in small matka pots which was to die for. I used to have one everyday till I was diagnosed with gestational diabetes during my second trimster, thanks to the daily intake of kulfi. That was the end of my kulfi era.

Until I remembered it last week and I had this desperate craving for kulfis. When I rummaged through my pantry I found a can of evaporated milk which I had bought long back just because it was on discount sale. I had all the other ingredients needed for making the dessert and after rocking pappu to sleep, I set to work. Its really a breeze to make this dessert provided you have a can of evaporated milk because the key to making a good kulfi is reducing the milk which in itself is a time consuming job. But using already evaporated milk reduces the preparation time by half.

Prep time: 10 mins; Cooking time: 20 mins; Serves - 6-10
~*What U Need*~
Evaporated milk - 1 can
Milk - 1/2 cup
Sugar - 3 tbsp
Condensed milk - 1/4 cup
Almonds - 10
Cashews - 10
Cardamom powder - 1/4 tsp

How I Made it:
Dry roast the almonds and cashews till golden and aromatic. Take the almonds and cashews in a coffee grinder and pulse till you get coarse crumbs. A few large pieces are ok, it just adds to the texture. Take evaporated milk and milk in a large saucepan. Heat till it reduces 1/3rd of its volume. Add the sugar and condensed milk and cook till it melts. Next add the almond and cashew meal and cook for 5-6 mins till the mixture thickens. Add the cardamom powder and remove from flame. Cool completely and pour into kulfi moulds. Freeze overnight.

Serve chilled!!!

Mango Kulfi

I love mangoes, fresh juicy pulpy alphonso mangoes is wat I am talking about. It tastes divine and eating them is a pleasure which I missed last year... Being a new mother has its own cons and not allowed to eat mangoes is one among them. So last year, I was not even allowed to touch mangoes... Oh god, how I missed them... Seeing those juicy, ripe, bright yellow beauties stacked up made my mouth water. Well, Junior A is into his second year now and am no longer kept away from Mangoes.

That day I swore, swore that next year I will never let a day go by without eating a mango. True to that, I have been eating mangoes every single day, if not whole atleast half. I am still under vigilance but not the strict one. I am allowed to have an occasional bite every day. After two weeks of sinful indulgence I have started implementing them in desserts and here I am with a royal treat with the king of fruits. Its a perfect dessert for the unbearable temperatures that Chennai is seeing.

~*What U Need*~
Milk - 2 cups
Mango Puree - 1 cup
Sugar - 3 tbsp
Cardamom Powder - a big pinch
Chopped pista - 2 tsp
Cornflour - 1 tsp, mixed in 1 tbsp water.

How I Made it:
Take a non-stick pan, add the milk and in low flame boil till it reduces half in quantity (1 cup). Keep stirring during this time. Add the sugar and dissolve it completely.

Now add cardamom powder and cook for 2-3 mins. Remove from flame and cool it to room temperature. Now add the mango puree and mix well.

Add the chopped nuts followed by the cornflour slurry. Cook till it becomes thick. Pour into kulfi moulds and refrigerate overnight.

Serve with chopped mangoes.

** My Notes:
** You can skip adding the cornflour slurry too. Just till it is thickened so that it coats the back of a spoon.
** To remove the kulfi from moulds, run it under tap water for few seconds, leave aside for 1 min and then pull out.

Instant Kesar Badam Kulfi with Bambino's Badam Milk Mix

I got 3 mini packets of Bambino's Badam mix to have a go at the flavor. I emptied one packet for one cup of milk, added a spoon of sugar as suggested and had a sip. It was overly sweet and hence I handed over the cup to the huss. Even he was not satisfied with the flavor and since then the packets have been lying with no one to touch it. With no intention of throwing away the packets, I thought of making instant kulfi out of them and it disappeared the same day. I would not recommend this but in case you are lazy at times like me and have guests at the house then you can try this.

Makes - 3
~*What U Need*~
Milk - 2 cups
Milkmaid - 2 tbsp
Fresh cream - 4 tbsps
Bambino Badam Milk Mix - 2 packets

How I Made it:
Boil milk till it reduces to half the quantity(1cup). Keep stirring. Add condensed milk and mix till it dissolves. Add the badam milk mix and stir well.

After it cools, add the fresh cream and mix well. Pour it into kulfi moulds and freeze. It will take 6-7 hours to set. To un-mould, show it under running water for a few seconds.

Yummy creamy and instant badam kulfi ready. See how the huss has licked off the drops from the bowl.
