Coconut Pineapple Banana Bread | Easy Baking | Banana Breads

I love banana breads. Its so simple to make, all it needs is a single bowl and the outcome is something divine. At times I try different varieties with what I have in hand. And that is how I made this banana bread. The tropical flavors are predominant in this bread with the pineapple and coconut which makes it the more merrier. But if you are not a fan of the flavors then you can skip the pineapple and coconut and add walnuts instead, it still tastes fabulous. The bread keeps good for 2 to 3 days, but beyond that it starts drying up a little due to the whole wheat flour.


~*What U Need*~
Ripe Bananas - 2 or 3
Crushed Pineapple - 1/4 cup, drained
Coconut Oil - 1/4 cup
Sugar - 1/2 cup
All purpose flour - 1 cup
White whole wheat flour - 1 cup
Baking soda - 1 tsp
Ground cinnamon - 1 tsp
Ground ginger - a pinch
Sweetened shredded coconut - 1/2 cup

How I made it:
Preheat the oven to 350 F. Lightly grease and flour your loaf pan. In a large mixing bowl, mash the bananas and add the sugar, pineapple, and oil and whisk to incorporate. Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined. Fold in the coconut. Transfer the batter to the prepared pan and sprinkle with nuts or more sugar if you want. Bake for 45 to 50 minutes (regular loaf) or 20 to 25 minutes (mini loaf). The top should be lightly browned and a knife inserted through the center should come out clean. Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely.

Serve warm.

White Chocolate Banana Blondies

I had a plan for Valentine's day, I had a few breakfast recipes lined up but then all hell broke loose at our place. Last week was a nightmare, pappu was down with ear infection and cold with temperatures spiking to 100s. And so Valentine's day passed on like any another day. So here I am making up with some blondies. I am totally in love with these blondies, they are sweet, you get a hint of banana flavor and the white chocolate definitely comes through. Warm them up in the microwave for 30 seconds, top with some berries and a dollop of whipped cream and they taste insanely good.



~*What U Need*~
Unsalted butter - 1/4 cup
White chocolate chips - 4 oz
Bananas - 2 medium, mashed
Granulated sugar - 1/2 cup
Egg - 1
Salt - a pinch
Vanilla extract - 1 tsp
All purpose flour - 1 cup

How I Made it:
Preheat oven to 350F. In a large microwave safe bowl, melt the butter and white chocolate in 30 second bursts, stirring each time until melted. Stir in the sugar. Mix in the mashed bananas, Add eggs, salt, and vanilla and stir until well combined.

Mix in the flour until completely incorporated. Spread batter into a 8" square pan and bake 15-20 minutes or until tester comes out clean. Cool completely and store covered.

Serve warm with some berries on the side!!!

ABC Cake | Apple Banana Carrot Cake | Breakfast Cake

Well if you are looking for a bake which incorporates fruits, veggies, nuts and very little fat, then look no more, for I have a very simple breakfast cake for you today. Its filled with carrots, apple, banana and uses only quarter cup of sugar. Slice them up, toast 'em with some butter and serve it with some freshly squeezed orange juice or freshly brewed coffee and you have a delicious, kid-friendly breakfast to serve. So lets move on to the recipe.



~*What U Need*~
Whole wheat flour - 1 cup
All purpose flour - 1/2 cup
Brown sugar - 1/4 cup, packed
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Salt - 1/2 tsp
Cinnamon - 1 tsp
Canola oil - 2 tbsp
Egg - 1
Honey - 2 tbsp
Sour cream - 2 tbsp
Whole milk - 1/4 cup
Vanilla - 1 tsp
Carrots - 1 cup, shredded
Apple - 1, shredded
Bananas - 2, mashed
Walnuts - 1/2 cup
Cranberries - 1/4 cup, dried

How I Made it:
Preheat oven to 350°. In a medium bowl, combine carrot, apple, sour cream, oil, egg, milk and vanilla; stir well. Add the mashed bananas and mix gently.

Add honey and mix well. In a large bowl, combine all purpose and whole wheat flour, sugar, baking powder, baking soda, salt, and cinnamon; stir well with a whisk. Add the cranberries and walnuts and mix.

Fold wet ingredients with the dry ingredients. Spoon batter into a bundt pan coated with cooking spray. Bake at 350° for about 40-50 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool cake completely on a wire rack.

Slice and serve!!!

Whole Wheat Cinnamon Sugar Banana Bread

If you have been following my blog, then you now know that I love banana breads. They are a handy way to use those heavily speckled bananas without throwing them in the bin. Last week saw the men in the house down with severe cold attacks. Fruits too a backseat and there were no takers for the bananas. The bananas got spots, the spots turned brown and finally I left them undisturbed from another two days. And then they were perfect, perfect to make banana breads. I went a step ahead this time and topped it with a cinnamon sugar and sliced almonds.



Adapted from here
Mashed Bananas - 1 cup
EVOO - 1/3 cup
Maple syrup - 1/4 cup
Brown sugar - 1/4 cup
Eggs - 2
Salt - a pinch
Cinnamon - 1/2 tsp
Vanilla Extract - 1 tsp
Whole wheat flour - 1 3/4 cup
Baking soda - 1/2 tsp
Hot Milk - 1/4 cup + 1 tsp vinegar

Sliced almonds - 2 tbsp
1/2 tsp cinnamon mixed with 1 tbsp sugar

How I Made it:
Preheat oven to 325 F and grease a 9×5 inch loaf pan. In a large bowl, beat oil and maple syrup and sugar together. Add eggs and beat well. Stir in bananas and vanilla, then stir in the salt and cinnamon. In a bowl, whisk the flour with the baking soda. Whisk the flour into the wet ingredients and mix till combined. Add the milk and mix into batter until it is evenly distributed. Spread batter into the greased loaf pan. Sprinkle with cinnamon sugar and sliced almonds. Bake for 50-60 mins. Let the bread cool in the loaf pan for 5 minutes, then transfer it to a wire rack to cool completely.

Serve with tea or coffee!!!

Banana & Pecan Bread

Well, everything went fine over the weekend. Pappu is over the moon happy that he started school and looks forward to it every morning. We had a short vacation trip to Door county to enjoy fall colors and thanks be it the weather went from good to great over the weekend. So yeah, I am happy, happy that I could get some time off cooking, happy that my baby is not a cry baby when it comes to school and happy that we took some time off from regular life. Coming to this bread recipe, I made this one to be packed for our travel. The room that we booked had a kitchenette and so I packed this banana bread for the sudden hunger pangs. Moreover Pappu likes to munch on home baked goodies and having this bread on hand ensured that he had something to eat during our stay.


~*What U Need*~
All purpose flour - 1 cup
Whole wheat flour - 3/4 cup
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Almond milk - 1/2 cup
Chopped pecans - 1/2 cup
Egg - 1
Mashed bananas - 1 1/2 cups
Vanilla extract - 2 tsp
Brown sugar - 1/2 cup
Granulated sugar - 1/2 cup
Butter - 5 tbsp
Salt - a pinch

How I Made it:
Preheat oven to 350F. Lightly grease and flour a 9x5 inch loaf pan. Beat butter and sugars till light and fluffy. Add egg and vanilla and beat till combined. Add the mashed bananas and mix well.

In a separate bowl, sift the flour, baking powder and soda. Alternately add the flour mixture milk to the butter, ending with flour mixture. Pour into the greased pan and top with chopped pecans and bake for 60-70 mins. Cool and slice.

Serve with some butter and milk!!!

Eggless Skinny Banana blueberry muffins

As much as I love baking cakes and cupcakes, I always love to add a touch of health factor to my bakes like making it whole wheat or butter-free or adding fruits and vegetables. It would be either some ultra-ripe bananas or some chopped apples or some shredded carrots or when zucchini are in season some shredded zucchini but when blueberries or in that case any berries are in season it has to be berry muffins for my pappu. A warm muffin with a dollop of melty melty butter is his favorite breakfast. Here is my go to recipe for muffins when I have some ripe bananas and blueberries on hand.



~*What U Need*~
Whole wheat flour - 3/4 cup
All purpose flour - 1/2 cup
Baking soda - 1/2 tsp
Salt - a pinch
Cinnamon - 1/4 tsp
Honey - 2 tbsp
Light brown sugar - 1/4 cup
Ripe banana - 1/2 cup, mashed
Vanilla yogurt - 4 tbsp
Milk - 6 tbsp
Blueberries - 3/4 cup

How I Made it:
Preheat oven to 325F degrees. Spray muffin pan with nonstick spray. In a large bowl mix the flour, baking soda, salt, and cinnamon, set aside. In another bowl, mix the honey and brown sugar together. Add the mashed banana and yogurt. Fold the wet ingredients into the dry ingredients. Add the milk slowly and continue to fold. Dust the blueberries with some flour. Gently fold in the blueberries. Divide the batter between the muffin cups. Fill all the way to the top. Bake for 17-18 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to cool completely.

Serve with milk!!!

Banana Pudding Ice Cream | Easy Icecream recipes

I am part of this cooking challenge where we share two secret ingredients every month and cook a dish using one or both of the ingredients. This month I was paired with The Food Samaritan a.k.a Amrita Iyer who gave me 'banana' and 'condensed milk' as the secret ingredients. I was thrilled with the choice cos I knew what I would prepare immediately. This icecream has been in my mind for a long time because I loved the flavors(not the regular chocolate or vanilla) and the ease in making the icecream. The huss was totally thrilled with the icecream and so was pappu. A total winner, I would say.

~*What U Need*~
Sweetened condensed milk - 1 can/14 oz
Banana cream Jell-o Instant pudding - 1 pk/3,4 oz
Banana - 1, sliced
Heavy cream - 2 cups, 1 pint
Peanut butter - 1/2 cup
Chocolate syrup - 1/2 cup
Digestive biscuits - 1/2 cup, chopped(I used ragi biscuits)

How I Made it:
Whisk Jell-o into sweetened condensed milk. Stir in sliced banana and digestive biscuits. Beat the cream until stiff peaks form.

Fold the whipped cream into the sweetened condensed milk mixture. Layer 1/3rd of the icecream in your icecream bowl, place dollops of peanut butter on top, drizzle chocolate syrup, repeat with the rest of the mixture finishing with the icecream. Freeze overnight.

Serve topped with fudge sauce!!!

Banana Doughnuts with Peanut Butter Frosting | Baked Version

Over-ripe bananas are meant to be used in baking for us. And mostly it ends up as a gorgeous loaf of banana bread for our breakfast. Even pappu who is a picky eater loves banana bread and eats his share happily. Every week our local grocery store sells over-ripe bananas for 99 cents. Its usually atleast 2 pounds by weight and its always the organic variety. It might be squished here and there but they are just perfect for smoothies and banana bread. I never fail to grab one whenever I find them on sale.

These donuts happened when I still had some bananas from the discount sale and when I wanted to make something not banana-bready. I dipped then in peanut butter frosting to jazz them up a bit because the kid goes bonkers for stuff like these.



~*What U Need*~
Prep time: 10 mins; Baking time: 12-15 mins; Yield: 6

Banana, mashed - 1/2 cup
Sugar - 1/4 cup
Egg - 1
Yogurt - 1/4 cup
Butter - 2 tbsp, melted
All purpose flour - 1/2 cup
Whole wheat flour - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp
Salt - a pinch

For the frosting:
Peanut butter - 4 tbsp
Powdered sugar - 1/4 cup or more
Milk - as needed, to thin the frosting

How I Made it:
Preheat oven to 325ยบ. Lightly grease a 6 count donut pans with cooking spray. Combine bananas, sugar, yogurt, butter and egg in a large bowl. Mix till thoroughly combined. Combine flour, baking powder, baking soda and salt. Mix dry into wet mixture and fold gently. Divide into the donut pan. Bake for 10-15 minutes, until a tester inserted into the center comes out clean. Cool completely. Mix everything under the frosting list until desired consistency. Dip the donuts into the frosting and set aside till the frosting is set.

Serve with a glass of milk!!!

Banana Peanut Butter Granola

I like having oats for breakfast. Be it in the form of oatmeal or upma or dumplings, I like it anyways. It keeps me full on the tummy and makes me skip my mid-morning snack. Ever since I made my first successful batch of granola, I have been obsessed with it. One reason is that it is cheap when compared to the store bought ones, secondly you can flavor it the way you want and of everything you know what exactly is going into making it ~ whether it is high fructose corn syrup or pure maple syrup. The single over-ripe banana that was lying around made me try this variation. I added in some peanut butter since the huss is a fan of anything PB and what I got was granola with mild, very mild flavors of banana and peanut butter.


~*What U Need*~
Rolled oats - 2 cups
Banana - 1, mashed
Maple syrup - 2 tbsp
Peanut butter - 4 tbsps
Canola oil - 2 tbsp
Cinnamon - 1/2 tsp(optional)
Vanilla extract - 1/2 tsp
Chopped nuts - 1/2 cup

How I Made it:
Preheat your oven to 350 degrees. In a saucepan, melt the peanut butter, maple syrup and oil in medium heat. Add in the mashed banana, vanilla, cinnamon and mix together.

Cool slightly and add the oats, nuts and mix well till evenly coated. Spread the oats out in a thin layer on a cookie sheet. Bake for 25-30 minutes, stirring it once every 10 mins. Bake till evenly browned, remove from the oven and let them cool. Store in an air tight container in the refrigerator.

Serve with almond or coconut milk!!!

100% Whole Wheat Banana Bread

Finally i cracked the code to a 100% whole wheat banana bread... Yes I made a banana bread that was full on wheat flour and zero on white flour. A banana bread that was moist, soft and not so crumbly... A banana bread with the right amount of sweetness and perfect for breakfast... And more of all, it is my own recipe. I didn't copy it from anywhere nor did I use any recipe for reference. The key here is using brown heavily speckled bananas, molasses and buttermilk. You know we need the right amount of wet ingredients to give the bread some moistness. And then use brown sugar, it adds more moisture and keeps your bread soft, moist and light.

The recipe is simple. Mix the wet ingreients, set aside. Mix the dry ingredients, set aside. Gently fold the wet into the dry. Tada and you have your batter. If you feel that your batter is two dry, then add a couple more tablespoons of buttermilk and mix gently. I used the Aashirvad atta that you get in Indian stores and I am not sure how the whole wheat pastry flour or white whole wheat flour would work on this recipe. Whatever you use, be sure that the batter is not too thick or too runny. However you have a point to note, the bread stays nice and soft and moist for two days but then it starts leaving off its moisture.


~*What U Need*~
Whole wheat flour - 1 3/4 cups
Brown Sugar - 1/4 cup
Molasses - 2 tbsp
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Vegetable oil - 1/3 cup
Eggs - 2
Bananas, over ripe - 2, medium/ 1 cup
Buttermilk - 1/4 cup+ 2 tbsp
Walnuts - 1/2 cup, chopped
Salt - 1/4 tsp

How I Made it:
Preheat oven to 350 F. Grease a 9x5 inch loaf pan. Mix flour, sugar, baking powder, soda salt, and nuts thoroughly. Mix oil and eggs together. Mix in bananas and molasses. Add the buttermilk and mix well. Add dry ingredients to banana mixture. Stir until just smooth. Pour into loaf pan. Bake for 45 minutes.

Slice and serve with milk!!!
