Wholewheat Banana & Raisin Scones

Breakfast like a king, lunch like a prince, and dine like a pauper is what they say. But to be frank, this is seldom followed and that doesn't pertain to my household. Many of the working duos(couples) out there donot care about their breakfast. And don't have me start about friends who stay in hostels. And then there are some who skip breakfast and/or lunch in the name of DIET. Don't know who gives them all these strange ideas that skipping food will help you reduce weight. Skipping Junk food and fatty food is what they might have meant. And next in-line are those workaholics - they work, work more and still more that they forget their food. People WAKE UP, give timely food to ur body to help it do its work. You need to eat HEALTHY to stay healthy.

Now why did I start this conversation. Okay, I get it now. All these words are due to self-experience. I was one who skipped breakfast and lunch and then bang... one day my stomach started burning like hell. Eat anything, it didn't subside. A visit to the doctor, a whole lot of medicines, a fear of ulcer, a few advises from everyone around and a self-realization is what I needed to be back in line. So my advice "EAT ON-TIME".

If you don't feel like having the regular oatmeal or bread/jam/butter or idlis or dosas "like me", make something like these flavor-packed scones the previous night, dump them in the fridge, toast with some butter, smear some jam and enjoy it hot with some cold milk. Variety makes you want more. So try new ways to enjoy ur breakfast. Make it more healthy by adding in some chopped nuts or if you are a choco-holic, add some chocolate chips.

The year 2013 seems to be working like a charm and am just waiting to find out what the rest of the year holds.

~*What U Need*~
Adapted but made whole wheat from here
Ripe Banana - 1/2 cup, mashed
Milk - 2 tbsp, if needed
Whole wheat flour - 1 cup
All purpose flour - 1/4 cup
Demerera/Brown sugar - 3 tbsps
Yogurt - 1/4 cup
Baking powder - 1/2 tbsp
Vanilla essence - 1/2 tsp
Butter - 2 tbsp
Raisins - 1/4 cup
Chocolate rice/vermicelli - 2 tbsp
Salt - a dash (omit if using salted butter)

How I Made it:
Blend the bananas along with the sugar to a smooth mixture. Add enough milk to make 1/2 cup. Stir in yogurt and vanilla essence and set aside.

Whisk together the flour, baking powder, and salt in a large bowl. Cut the butter into several pieces. Work it into the dry ingredients with your finger tips till it resembles coarse crumbs.

Make a well in the center of the flour, pour in the banana-yogurt, add the raisins, chocolate rice and stir just enough to incorporate all of the flour. Tip the dough onto a floured surface, give it a few gentle kneads to bring it together, pat it into a disk about 1-inch thick and slice the scones into eight wedges. Put it on a greased baking sheet and pull them apart a little to give them some room to expand. Bake for 25-30 minutes in a preheated oven @ 200C, until the scones are firm to the touch and turning golden-brown on the edges. Cool completely.

Serve with powdered sugar and butter/jam. A glass of cold milk goes well too.

** My Notes:
** Work the dough with gentle hands. Donot knead it like chapathi.
** I didn't have chocolate chips but had some sprinkles and hence added a handful of that but it needed more to get that chocolate flavor.
** Add some chopped walnut or pistachios for extra crunch.
** It tasted good on its own but I slit them up, toasted it and smeared it with mango jam.

  9. It's the same in my family too. Breakfast is the lightest meal whereas dinner is the heaviest even though it should be the opposite. I'm working towards changing that. Baking with whole grains is something I want to try. Great recipe.

  14. Scones ~ that got my attention. Chocolate rice/vermicelli ~ I'm sitting up and ready to take action. This recipe might work by prepping everything the night before and baking it in the morning. Good pics, Vimitha.
