I bought this packet of gelatin sometime back just because I have seen it being used in some gorgeous looking panna cottas in the Masterchef episodes. Back when I got it, I didn't even have the intention of making a panna cotta, because I was not confident to use it. What if the gelatin didnot bloom properly, what if I didn't put in enough gelatin, what if the panna cotta didn't set properly, what if I put in more gelatin and the dish got hard... and my list of what ifs went on.
But then when I saw the lonely packet of gelatin and some 1/2 cup of left over cream, I mustered my confidence and tried a simple vanilla panna cotta for our weekend dessert and a strawberry coulis to go with it. Bang, it was a hit with the family.
I served it with some strawberry coulis. The original recipe for the strawberry coulis called for some corn starch too but I ignored it as I didn't want the natural strawberry flavor to get corrupted.
For the Vanilla Panna Cotta
Milk - 1/2 cup
Cream - 1/2 cup
Sugar - 1/4 cup
Gelatin - 1 1/2 tsp
Water - 1 tbsp
Vanilla essence - 1 tsp
For the Strawberry coulis
Strawberries(big) - 6-7
Sugar - 1/2 tbsp
Lime Juice - few drops
Water - 1 tbsp
How I Made it:
Add gelatin to 1 tbsp of water and allow to bloom for 10 mins untouched. Meanwhile, in a nonstick pan, add cream, milk, sugar and vanilla essence and whisk till the sugar is dissolved and the mixture comes to a boil. Remove from heat and add the dissolved gelatin and whisk till well incorporated.
Pour into ramekins and refrigerate till set. This will take atleast 3 hours.
For the strawberry coulis, hull the strawberries and in a blender, blend the strawberries, sugar, water and lime juice till you get a smooth consistency. Refrigerate till use.
When serving, demould the panna cotta from the ramekins. Place on a plate, pour 1 tsp of strawberry coulis on top of the panna cotta and serve chilled.
