Potatoes are my all time favorite. I usually make potato fry only all the time and that tastes delish with curd rice... I wanted something masala-y yesterday and tried this out and the flavor of the roast suited my palate very well. Had this with curd rice as usual and it tasted yum...
Medium Tomato – 1
Curry leaves – 1 sprig
Potato – 2
Oil – 2 tbsp
Salt – as needed
Chilli powder – ½ tsp
Coriander powder – 1 tsp
Turmeric powder – a pinch
Cumin powder – ½ tsp
Ginger – garlic paste – 1 tsp
Minced Coriander leaves – 1 tbsp
Cut the potato into cubes.
Grinder the onion and tomato into a coarse mixture. Give 2-3 pulses in the mixie
Heat oil in a tawa. Add the curry leaves and allow to splutter
Add the onion-tomato mixture and sauté. When half done, add the ginger-garlic paste and sauté till the oil oozes out.
Now add the turmeric, chilli, coriander and cumin powders and salt and fry till done.
Add the cubed potatoes and mix well. Close with lid and cook for 5 mins. After 5 mins, open and stir well. Take care that the potatoes and masala don’t get burnt.
Repeat the above step till the potatoes have roasted and blended well with the masala.
If you feel that the masala is getting too dry, then sprinkle some water.
