I am happy to say that this blog has crossed over 1000+ comments and this is my 50th post (Taking into account my blogs of 2011. Seriously in 2010, I was not totally into food blogging). Can you believe that. Definitely I can't. Support me dears like this so that I can blog forever.
Last time when I baked the Dark chocolate cupcakes, I served it to my parents and the cakes vanished with the wink of an eye... I was happy to see each cupcake passing down their throats in minutes. But the sad part was that, before we knew it, all the cupcakes were gone and none was left for huss dear who had office that day. When I showed him the pics, he was mad at me. "How could you do something new and didn't save a last piece for me" went he. "Sorry" went I. Since then, he has been asking me to bake some cupcakes for him and finally I baked him some Vanilla - Chunky Chocolate Cupcakes.
Sugar – 1 cup
Baking powder – 1 tsp
Baking soda – ½ tsp
Milk – 3/4 cup
Egg – 1
Butter – 1/4 cup
Vanilla essence – 1 1/2 tsp
Dark chocolate bar - 1
How I Made It
Break the dark chocolate into large chunks.
Sift together all purpose flour, baking powder, baking soda and salt thrice
Melt the butter. Cream the sugar and butter together
Add the egg and mix well till creamy. Add the vanilla essence and beat well
Add the milk and combine everything without any lumps. Now add the flour mixture and fold in till well combined and lump-free
Fold in the chocolate chunks gently. Don't over-mix.
Line a muffin tray or individual muffin pans with muffin liners. Pour the batter till half-filled.
Preheat the oven to 180 degrees C and bake for 35-40 mins until a tooth pick inserted comes out clean.
Or
Place it in a steamer and steam for 30 minutes or until an inserted skewer comes out clean.
Huss's verdict: Was heavenly. Make it often. The gooey chocolate-y center was like molten chocolate lava.
