Peanut Butter Chocolate Chip Banana Bread

Okay, let me tell you how my day is here. Its bright and sunny and the sky is clear with streaks which are by the way from the passing jets. There is no snow nor rain nor freezing winds nor polar vortex which obviously is a good sign.
But no its not, inside my heater is on cos my patio door is loose and the cold air is seeping in and am wearing fleece pants and am huddled in my couch with a piping hot cup of latte when I have to go grab my lunch. But I can't, I just can't move cos its cold and all I need is hot, heat and warmth. The temperature is always in the negatives and decreasing.

And so I decided to bake. Now don't yell at me cos its bananas again. Its not another banana bread, its peanut butter chocolate chip banana bread... And if you are just not satisfied with peanut butter and rich dark chocolate chunks or if you want to jazz it up more then you can swirl in some nutella or you can sprinkle some cinnamon streusel crumb on top of the batter too. Whatever be the case you are gonna love this bread. I am trying to cut processed flour from our diet and so I replaced one part of the all purpose flour with whole wheat flour. You could either use only all purpose flour or replace 1/4th APF with wheat flour.

Prep time: 15 mins; Cook time: 40nmins; Makes - 2 mini loaves

~*What U Need*~
All purpose flour - 1/2 cup
Whole wheat flour - 1/2 cup
Baking soda - 1/4 tsp
Salt - 1/4 tsp
Banana - 1, large
Peanut butter - 1/4 cup
Light brown sugar - 1/4 cup
Granulated sugar - 2 tbsp
Buttermilk - 1/3 cup
Vegetable oil - 2 tbsp
Egg - 1
Vanilla extract - 1 tsp
Chocolate chunks - 1/2 cup

How I Made it:
Preheat oven to 350F. Grease two mini loaf pans. In a bowl, whisk together the flour, baking soda and salt. Set aside. In a separate large bowl, whisk together the banana, peanut butter, sugars, buttermilk, oil, eggs and vanilla extract until smooth. Pour the wet ingredients into the flour mixture and fold together with a rubber spatula until completely combined.

Gently stir in the chocolate chips. Transfer the batter to the prepared loaf pan and bake until the loaf is golden brown and a toothpick inserted into the center comes out with just a few moist crumbs, about 30-35 mins. Allow the bread to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.


Serve with milk!!!
