Mango Granita

I have a granita category in my quick-pick recipe index. I created one with the thought that I would be scraping granitas every now and then. But since the birth of my blog, till now not even a single granita recipe has made its way here. Not that I have not made any granitas... I remember making one during the watermelon season and then again during the strawberry season... And I never forget to take pictures of anything that has been tried and tested in my kitchen.

Then again, the granitas that I made were so addicting that I was tempted to dig in straight away before all those sparkling icicles bursting with flavor melted away into a pool of mango or strawberry juice. Granitas make healthy desserts (provided u skip the sugar part) on those blazing summer days. Filled with flavor, not tampering all that fruity goodness, these are easy-to-make desserts which will be liked by everyone.

I have used alphonso mangoes here which are sweet and fruity on its own and so I skipped the sugar but if you are using less sweet mangoes then add few tbsps of sugar.

~*What U Need*~
Ripe Alphonso mango - 1
Water - 1/2 cup
Lime juice - 1 tbsp(optional)
Sugar - to taste
Mint sprigs - to garnish

How I Made it:
In a blender, blend mango pieces, water and sugar until smooth. Add lime juice and combine well. Pour into an aluminium loaf pan or a plastic airtight box. Freeze for 1 hour. Scrape with a fork, you will get flakes of ice. Return to freezer. Repeat the process every 30 mins. When there is no remaining blocks of ice, u are good to go. Scoop into glasses and serve garnished with mint leaves.

Serve cold straight out of the freezer!!

** My Notes:
** You can easilty double or triple the batch.
** Adding sugar and lemon juice is optional.
** You can use any seasonal fruits of juice.
** The texture of the granita depends on how you scrape the ice block.
