This is my first attempt in making an egg-less and butter-less version of cake and I would say that this is a no-fail recipe. You cannot go wrong anywhere and the end result is an utterly yummy and soft cake. Beginners in baking can surely try this for their first attempt to gain that confidence in taking the next step in baking. Whenever I have an urge to have something sweet and cake-y, I am always reminded to make this cake as it easy to whip up and all the ingredients are always available in my pantry.
This has been sitting in my drafts for a long time. Then I thought why not publish this for the festive season. It has dates, nuts and it is a bake. This makes a perfect gift for all your vegetarian friends. I made this when my nonna, amma and appa came down to visit me... Amma loves cakes very much and prefers my homemade bakes. In order to surprise her I made this and she loved it. When told it was eggless and butterless, she went on to grab two more pieces.
All purpose flour / Maida - 1 cup
Lion Seedless aka Brown Dates - 18
Milk - 3/4 cup
Sugar - 3/4 cup
Oil - 1/2 cup
Baking Soda - 1 tsp
Cucumber seeds- 1 tbsp
How I Made it:
Preheat oven at 350 F for 10mins. Soak dates in warm milk and set aside to make it soft. Once soft, grind the dates to a fine paste. In a mixing bowl, add sugar, milk and oil, stir until sugar completely dissolves. Keep aside.
Sieve maida with baking soda twice so that baking soda is evenly distributed, set aside. Add the dates paste to milk sugar mixture and mix well. Now add maida and combine well. Add the seeds/nuts and stir just to combine.
Pour the batter into a greased pan and bake for 25-30 mins. An inserted toothpick should come out clean. Cool down the cake completely on a wire-rack and then cut into slices.
Verdict:
The cake is moist, very soft and too good when it comes to an egg-less and butter-less version. My nonna who hates cakes had a try and went on to ask for another piece... Enough reasons for you to try this out, I think...
** My Notes:
** I used brown dates but you can also use black dates. If using the black variety, do skip the step of soaking the dates in milk. You just need to grind it using some milk to a smooth paste.
** I used cucumber seeds but you can use walnuts or nuts of ur choice.
** You can also chop the dates finely instead of grinding.
** In addition to the dates, you can also add tutti frutti, chopped figs and other dry fruits.
