The Perfect Chocolate Cupcake | Cupcake Tower for his 5th month

...how fast kids grow??? Not again with the "it just seems like yesterday that we held this 3 kg love in our hands" story but sitting back (...not that he allows me to sit back) but when he does and thinking, this day five month back, was one of the awesome-st day of my life. I still remember how pinkish and fragile he was. I was frightened even to hold him but now the maturity that both of us has gained is remarkable. Never did I know that I had so much patience to handle things and thanks to my kid for all the lessons taught.. I am looking forward for all that he is having in store for me.

This Saturday the junior completed five months. I didn't have anything planned for the day as we had to pay a visit to his pediatrician for his regular check-up. It generally takes half of the day and I knew that we would be tired after turning home. Once back from hospital, Junior fell fast asleep and 'A' had gone to meet his friends. So poor me was sitting alone, not knowing what to do. It was then that I remembered the perfect chocolate cupcake that I had bookmarked from the Chef-in-training site long back. So I decided to bake a cupcake tower for Junior's 5th month birthday.

Never did I know that Junior turning 5 months would be a "turning point" for both of us. Yes, I have been asked to introduce Junior to solid foods starting today minimizing mother's milk. Am literally shivering on my knees ever since I was handed over with the "menu-card" and mom has been calling me up every now and then to give me advice and courage. Wish me luck guys.

These cupcakes were so moist, moreish and deliciously so addictive that your hand would go on to grab more.

Adapted from Chef-in-training, originally from Goodfoodgourmet
Yields:10 medium sized cupcakes
~*What U Need*~
Unsweetened cocoa powder - 1/4 cup, sifted
Hot Water - 1/2 cup
Buttermilk - 1/2 cup
Sugar - 1 cup
Egg - 1
Vegetable oil - 1/4 cup
Vanilla essence - 1 tsp
All purpose flour - 1 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Heavy cream - 1/4 cup

How I Made it:
Add the cocoa powder to the hot water and whisk without lumps until completely dissolved. Next add the buttermilk followed by the sugar and whisk until all is combined.

In a separate bowl add egg, oil and vanilla and mix. Slowly add the cocoa-buttermilk mixture.

Whisk till combined. In a small bowl, stir flour, baking powder, baking soda and salt. Whisk this into the wet mixture until you no longer see any lumps.

Stir in heavy cream until evenly mixed. Pour into cupcake tins and bake at 175 degrees F for 20 minutes or until done. Let cool and chill in fridge for at least 30 minutes.

Moist, dense and delicious cupcakes ready to be served!!!

Kids grow fast..time really flies...Lovely cake for the 5th month..looks soft and delicious...All the best for the start of solid foods...It really is not that tough...I was scared initially as I was all alone here and wud call mom every now and then...Slowly learned that they manage stuffs...we tend to get scared simply..:)

  9. yummy looking cupcakes... dear, i've a question, may sound stupid but then... buttermilk is moru, rite? as for ur lil one, i would strongly advise to start solids after month 6, if he is getting sufficient mother's milk... i was one unfortunate mom who was barren in case of both my children and i feel sad each time i see them... if ur boy is full all the time, not fussy, satisfied and sleeps well, you know you are feeding well... dun give him anything till he completes 6 months, as there is nothing more that they need apart from whatever goodness God has created in that wonderful substance called breastmilk... :)

  12. cupcakes looks yumm and perfectly baked.. I also support Rafeeda. Dont give solid food until he is 6 months old. Breast milk is the best food ur child can get at this time and help improve his immunity power.
