Chocolate Truffles for V day... would die for them

♥ Happy Valentine's day to all my sweet readers. ♥
Let's celebrate the day with none other than the romantic, mood-lifting "dark chocolate". I am happy proud to say that I am a die-hard chocoholic...a dark chocolate chocoholic, ever since I started understanding the difference between milk, dark and white chocolate. A bite of dark chocolate will elevate my mood when I am down. I eat chocolate when I am happy and I savor chocolate when I am sad.

I have cut down my intake of chocolates and sweets these days but that would never stop me from having a bite occasionally. Huss is enjoying this period as he gets more than his regular share.

I tried this yesterday to elevate the mood of the on-setting V-day so that I can get more gifts *winks*. Don't mistake me, that was not the original intention. I made this when I had some leftover cream and an overwhelming urge to have a bite or two of smooth, melt-in-the-mouth truffles.

~*What U Need*~
Cooking chocolate(bittersweet / dark) - 200 gms
Heavy whipping cream - 75 gms
Unsalted butter - 2 tblsp

For garnishing
Cocoa powder
Dessicated coconut
Pound Pistachios / toasted peanuts
Chocolate vermicelli


How I Made it:
Chop the chocolate with a serrated knife and set aside. Heat the cream and butter together, whisking as you heat. When bubbles start to form along the edges of the pan, remove from heat. Pour this over the chopped chocolate and stir gently until the chocolate melts and blends into a homogeneous mixture. Allow to rest till it comes to room temperature. Cover the bowl with plastic wrap and refrigerate until firm minimum 2 hours.
Using a tablespoon, scoop out enough chocolate to make balls of desired size. Roll the balls in cocoa powder and place the balls on a butter paper. Refrigerate until serving.

When serving, take it out, allow to come to room temperature for a soft and smooth truffle.

Note:
You can roll the truffle balls in icing sugar, finely chopped pistachios and chocolate vermicelli too. I rolled some in dessicated coconut, some in chocolate vermicelli and some in chopped toasted peanuts.
