We are still getting watermelons here and my love for them never dies. I knew that the melons of this season will be watery devoid of their sweetness. Whatever sweet or not sweet, I wanted to have them. So went on and got a 3 kg watermelon. My first bite into the melon and I was devastated. It was tasteless and I knew that I wouldn't have another slice out of it. I didn't want to waste the entire lot and so started adding sugar and making juice out of it. I wanted to make a variation and hence tried out making some popsicles and we loved it. The addition of ginger to the recipe gave a very different overall flavor.
Watermelon cubes / pieces - 1 cup
Water - 1/2 cup
Sugar - 2 tbsps
Ginger juice - 1 tsp
Small watermelon pieces - a handful
How I made it:
Deseed the water-melon pieces and blend them along with water, sugar and ginger juice. Strain this mixture. Pour into popsicle molds, drop in the small watermelon pieces. Freeze for 8 hours.
To remove from the molds, show under running water and pull after 2 mins.
