Mughalai Paratha

Days when I am home early after work, I would always try something new. The regular chapathis or dosas are usually out of question. The huss is a great fan of the Ada kozhi paratha that you get in Dindugul Thalapakatti restaurant, Velachery. I wanted to re-create their dish but with simple ingredients. I skipped the addition of fried shredded chicken and stuck to eggs and onions. The result was good and he liked it. Will try the original recipe soon.


~*What U Need*~
Makes - 2 parathas
For Paratha
Maida-1 cup
Salt to taste
Oil-1 tsp
Water - to knead
Sugar - 1/2 tsp

For Filling
Egg - 1 large
Onions - 1/2
Green chilli - 1
Salt
Coriander leaves


How I Made it:
Knead the flour, salt, sugar, oil and water till you get a soft, elastic dough. Rest for 15 mins. Divide into equal balls.

Chop the onions, green chilli and coriander leaves very finely. Mix with egg, and salt till well blended.

Take a dough ball and spread it as thinly as possible. Heat little bit oil in a tawa, place the rolled-out dough, pour some egg mixture in the center. Fold on all sides so that it forms a square shape. Once the bottom has cooked and brown spots appear, flip it over, add some oil around and cook on the other side. Cook till the egg is cooked completely and the paratha gets golden on all sides.

Note:
Sugar is added as it enhances the browning. You can skip this if not needed.

Serve with side dishes of ur choice. I served it with mushroom masala roast.
