Carrot - Beans Poriyal / Stir Fry

Carrot-beans stir fry is one side dish which I opt for whenever I have very less time. A simple yet perfect combination of veggies. Would be great with curd rice or paruppu saadam. Needs no prior introduction and so lets go directly to the recipe.


I love the crunchiness of the fried urad dhal in between the soft veggies and hence add lots of them. This along with the caramelized onions makes it a yummy side dish for anything and everything.

~*What U Need*~

Carrots(Medium) – 4 nos
Beans – 15-20 nos
Onions(Medium) – 2
Red chilli powder – 1 tsp
Turmeric powder – a pinch
Salt – as needed
Oil
Mustard seeds – ½ tsp
Urad dhal – 1 tsp
Channa dhal - 1 tsp
Curry leaves – 2 sprigs

How I Made it:

Clean and chop the carrots into small cubes. Chop the onions finely. Chop the beans too.Heat oil in a kadai, add the mustard seeds and when crackled add the urad and channa dhal. When the dhal has turned brown, add the curry leaves and fry well.
Now add the onions and sauté till brown.
Add the salt, turmeric- and chilli powder and fry for 2-3 mins
Add the carrot and beans and fry well till cooked. Remove from flame.

Serve as side dish for any rice…
