I once tried milagai bajji in the beach and that was when I vowed that I would never ever try this again. It was extremely hot and I had to run to next shop in search of coke to cool my tongue down. When I went for my weekend grocery shopping, I saw the bajji milagais and thought why not give it a try at home. So got just 2, one for MR. and one for MRS. I had some leftover paneer and hence thought of making paneer stuffed milagai bajjis for our tea time snack. So this is how I made it.
~* Ingredients*~
Milagai bajji - 2
For coating:
Gram flour - 3 tablespoons
Rice flour - 1 1/2 tablespoon
Corn flour - 1 tablespoon (Added to give crispiness)
Chilli powder - as needed
Salt - to taste
To Mix:
Grated Paneer - 1/2 cup
Mashed potato - 1/2 cup
Chilli powder - 1/2 tsp
Garam Masala - 1/4 tsp
Salt - to taste
Cornflour - to seal the cut
Oil for frying

Cornflour - to seal the cut
Oil for frying
The Making:
Add water to the ingredients specified in the covering section till semi thick consistency. You can use bajji powder instead of these flours also. Set aside. Now onto the stuffing. Combine all the ingredients mentioned in the To mix section into a thick paste. Clean the chillis well and de-seed them by slitting the sides.
Now stuff the paneer - aloo mixture into the chillis. Seal the cut with corn flour. Coat the chillis evenly in the gram flour mixture and deep fry in oil till brown
Serve hot as tea time snack
I had some extra stuffing which I dipped in the gram flour mix and deep fried in the oil which was equally tasty, moist and soft too...
